Ingredients:

  • 7 lb Organic 2 Row
  • 1 lb Melanoidin
  • 1/2 oz hallartau @ 60min
  • 1/2 oz hallartau @ 5min
  • 1 lb brown sugar
  • 1 wirfloc tablet
  • WY 4766 Cider Yeast
  • 1 gal organic apple cider
  • 2 oz Apple extract
  • 1/2 cup corn sugar
  • Proceedure:

    Brew Day:

    Warm mash tun with boiling water

    2 gal strike water goes in @ 167F and tun settles @ 156F

    1 hour later, mash tun is showing 149F

    Continuous sparge with water @ 168F

    Sparge for about 1.5 hours, got a little under 5 gal wort

    60 min: 1/2 oz hallertau

    10 min: 1 lb Brown Sugar

    10 min: 1 wirfloc tablet

    5 min: 1/2 oz hallertau

    Chill to 88F and rack to primary

    Pitch yeast

    4 Days:

    Add 1 gal cider to the primary

    14 Days:

    Rack to secondary

    Notes: There is a TON of crazy chunks in the primary. Kinda sketchy...

    35 Days:

    Rack into bottling bucket.

    Apple extract and corn sugar. Bottle.

    Verdict:

    It's good! Definitely tastes a lot like apple. It's like a cider but then it's kinda bready. Very good.
